Ingredients
- 500 g FunCakes Mix for Cookies
- 500 g FunCakes Deco Melts – Dark Chocolate Flavor
- FunCakes Mini Marshmallows
- FunCakes Sugar Decorations – Football Set/8
- A handful of raisins
- M&M’s or Smarties
- 1 egg (approx. 50 g)
- 150 g unsalted butter

- FunCakes Parchment Paper Sheets 30x30 cm (50 pcs)
- Wilton Performance Pans® Square Baking Pan 20x20 cm
- Wilton Wide Glide Rolling Pin 50 cm
- Patisse Round Cookie Cutter 8 cm
Step 1: Bake the FunCakes Cookies
Knead the FunCakes Cookie Mix, butter, and egg into a dough. Wrap the dough in a plastic wrap and let it rest in the refrigerator for at least 1 hour.
Roll the dough out on a floured surface to about 2–3 mm thickness. Use the round cookie cutter to cut out circles and place them on a baking tray lined with FunCakes parchment paper.
Bake in a preheated oven at 180°C/350F (160°C/320F fan) for 8–12 minutes until lightly golden. Let the cookies cool completely.
Step 2: Prepare the FunCakes Deco Melts
Place the FunCakes Deco Melts Dark Chocolate Flavor in a microwave-safe bowl. Microwave at 500W for 15–20 seconds at a time, stirring in between, until fully melted.
Step 3: Assemble the Rocky Road
Line the base of the baking pan with FunCakes parchment paper and line the sides with acetate foil. Tip: dampen the sides or use Bake Release Spray for better adhesion.
Break the baked cookies into pieces and stir them into the melted Deco Melts. Optionally, add Mini Marshmallows, raisins, and M&M’s or Smarties.
Pour the mixture into the pan and gently press it down. Decorate the top to your liking.
Let the Rocky Road chill in the refrigerator for about 30 minutes, then store at room temperature.
