With this recipe, you can easily bake your own red velvet cookies at home, perfect for enjoying with a cup of coffee or as a sweet treat whenever you crave something special!

Prepare

Ingredients:

  • 350 g FunCakes Mix for Red Velvet
  • 100 g FunCakes Chocolate Chunks White
  • 1 egg
  • 125 g unsalted butter

Necessities:

  • De KeukenBij Reusable Silicone Baking Mat, 42 × 35 cm
  • Patisse Round Perforated Baking Ring, 8 cm
  • Cling film

Step 1: Prepare the cookie dough

Prepare 350 g of FunCakes Mix for Red Velvet with 1 egg and 125 g of butter, and mix until a dough forms. Finally, knead in 100 g of FunCakes White Chocolate Chunks. Shape the dough into a log approximately 6 cm in diameter and wrap it in cling film. Place it in the freezer for at least 2 hours to firm up.

Step 2: Bake the cookies

Line a baking tray with parchment paper and preheat the oven to 200°C (180°C for a fan oven).

Use a sharp knife to cut the dough into 12 slices, each approximately 2 cm thick. Place the slices on the lined baking tray, leaving enough space between them as the cookies will spread during baking. Ideally, bake 6 cookies at a time. If you use perforated baking rings, you can fit all the cookies on the baking tray at once.

Bake the cookies for 15–18 minutes, or until done.

Step 3: Leave to cool

The cookies will still feel soft when they come out of the oven. As they cool, the outside will become crispy while the inside stays deliciously chewy.
