Prepare
Ingredients:
- 230 g Soezie Original Wheat Flour T55
- 4 eggs
- 250 g sugar
- 250 g unsalted butter
- Handful almonds
- Handful hazelnuts
- Handful cashews (ongezouten)
Necessities:
- De KeukenBij Reusable Silicone Baking Mat, 42 × 35 cm
- Patisse Round Perforated Baking Ring, 8 cm
- Cling film
Step 1: Prepare the cookie dough
Combine the Soezie Original Wheat Flour, eggs, sugar, and butter. Knead the ingredients together until you have a firm dough. Roughly chop the nuts and knead them into the dough. Shape the dough into a long log approximately 6 cm in diameter and wrap it in cling film. Leave it to firm up in the freezer for at least 2 hours.
Step 2: Bake the cookies
Preheat the oven to 200°C (180°C for a fan oven) and line a baking tray with baking paper.
Tip: Why not try the reusable baking paper from DeKeukenBij? It’s super convenient: you’ll always have baking paper on hand, and it’s better for the environment!
Cut the dough into slices approximately 2 cm thick and place them on the baking tray, leaving plenty of space between each cookie. Ideally, bake 6 cookies at a time, as they will spread during baking. If you use Patisse perforated baking rings, you can fit all the cookies on the baking tray at once.
Press a few extra nuts into the top of each piece of dough and bake the cookies for approximately 15–18 minutes, until baked through.
Step 3: Leave to cool
The cookies will still be soft when you take them out of the oven. As they cool, they will develop a crispy exterior and a deliciously chewy center.
