Prepare
Ingredients:
- 230 g Soezie Original Wheat Flour T55
- 30 g Callebaut Cacaopowder Rouge Ultime
- 100 g FunCakes Chocolate Drops Dark
- 4 eggs
- 250 g sugar
- 250 g unsalted butter
Necessities:
- De KeukenBij Reusable Silicone Baking Mat, 42 × 35 cm
- Patisse Round Perforated Baking Ring, 8 cm
- Cling film
Step 1: Make the cookie dough
Combine the Soezie Original Wheat Flour, eggs, sugar, butter and Callebaut Cocoa Powder. Knead everything together until you have a firm dough.
Add the FunCakes Chocolate Drops and mix briefly until evenly distributed. Shape the dough into a long log approximately 6 cm in diameter and wrap it in cling film. Leave it to firm up in the freezer for at least 2 hours.
Step 2: Bake the cookies
Preheat the oven to 200°C (180°C for a fan oven) and line a baking tray with baking paper.
Tip: Give De KeukenBij's reusable baking mat a try! It's super convenient: you'll always have a reusable baking surface on hand, and it's better for the environment.
Cut the dough into slices approximately 2 cm thick and place them on the baking tray, leaving plenty of space between each cookie. Ideally, bake 6 cookies at a time, as they will spread during baking. If you're using the Patisse perforated baking rings, you can fit all the cookies on the baking tray at once.
Press a few white chocolate melts into each piece of dough and bake for approximately 15–18 minutes, until the cookies are cooked through.
Step 3: Leave to cool
The cookies will still be soft when you take them out of the oven. As they cool, they will become crispy on the outside and deliciously chewy on the inside.
