Step 1: Make the Dr. Oetker Mix for Cupcakes Naturel
Make sure all ingredients are at room temperature before making the batter. Preheat the oven to 175°C (hot air oven 170°C). Then make the batter as directed on the Dr. Oetker package.
First, spread the baking cups in the Wilton muffin baking pan. Then divide the batter with 2 tablespoons, or an ice cream scoop over the baking cups and bake the cupcakes for about 22 minutes until done. Then let the cupcakes cool thoroughly.
Step 2: Make the dough for the Saint Nicholas cakesicles
Put 50g of FunCakes Deco Melts White in a microwave-suitable bowl or melt au bain-marie. Melt the Deco Melts at max 500W for 15-20 seconds and stir well. Repeat the steps until the melts are almost completely melted (small pieces still visible). Keep stirring until the melts are completely smoothly melted.
Then crumble the cupcakes and mix in the melted FunCakes Deco melts. Make sure you get a smooth dough, so not too stiff or too dry.
Step 3: Melt the FunCakes deco melts for decorating the cakesicles
Melt the FunCakes Deco Melts red and white in a microwave-safe bowl at 500W for 15-20 seconds or au bain-marie. Then stir the Deco Melts well and repeat this process until the Deco Melts are almost completely melted, it does not matter if some small pieces are still visible as you can stir them away.
Use a spoon to spread the white and red melted deco melts into the Silikomart Ice Cream Mould Mini Classic, making sure the deco melts are evenly distributed throughout the Silikomart Ice Cream Mould Mini Classic. Then insert the ice cream sticks into the mold and let it set in the freezer for 10-15 minutes. Spread another layer on top if necessary after, so they don't break when you take the cakesicles out of the mold and then let set again.
Step 4: Making the cakesicles
First, carefully remove the ice cream sticks from the ice cream mold and then fill the ice cream mold with the made cupcake dough. Do not fill the icing mold to the brim and leave some space so you can cover the top with a layer of melted Deco Melts.
Melt your Deco Melts again, as directed on the package. Then insert the ice cream sticks again and cover the top with the melted Deco Melts. Put the mold back in the freezer and let the cakesicles cool and harden thoroughly.
Step 5: Decorating the Sinterklaas cakesicles
Once the Sinterklaas cakesicles have become thoroughly cold, carefully remove them from the silicone mold. Now it's time to decorate them!
For decorating, melt the FunCakes Deco Melts white and red separately one more time in a microwave-safe bowl at 500W for 15-20 seconds. Then stir the deco melts well and repeat this process until the deco melts are almost completely melted. Then keep stirring well until the deco melts are well melted.
Put a Funcakes piping bag in a glass and fill the piping bag with the melted white deco melts. Don't cut a piece off the piping bag yet, otherwise the melted deco melts will run right out. Repeat the steps with the red deco melts. Close the top of the piping bag tightly, so nothing can spill out.
Cut a small piece off the piping bag and decorate the cakesicles. Decorate as you wish by adding dots, a drizzle and/or a drip, for example, in the opposite colors. Finally, place the FunCakes Sugar Decoration Sinterklaas on top of the still-melted deco melts as you wish. Then let the Sinterklaas Cakesicles harden well in the refrigerator.
Tip: You can decorate the Saint Nicholas Cakesicles however you want! For example, also use 'Sinterklaas strooigoed'.
