It’s also perfect for colouring with food colouring. To cover a round cake of 20 cm in diameter, you’ll need approximately 500 g of sugar paste.

The following process is recommended for the best result:

• Let the sugar paste come to ambient temperature. Knead the sugar paste firmly until it is smooth and elastic. Dust the work surface with a bit of icing sugar and roll out the fondant with a rolling pin to an even shape (2-3 mm thick). Turn the sugar paste a quarter to prevent sticking. Are there still small cracks visible on the edges when the fondant is rolled out? Knead again firmly until the edges are smooth when rolling out. Then the sugar paste is ready for use.
• For colouring: Let the sugar paste rest for one hour after colouring (covered) for the best results. Knead the sugar paste again before further processing.
• Storage: keep in a dry, dark place, 15°C – 20°C.
