For a vibrant colour in drinks
Mix 1 to 2 teaspoons of ube powder with a small amount of hot water until smooth. Add steamed milk for a delicious ube latte or stir into smoothies, oatmeal and yoghurt.
Add a little acid for the most vivid colour in baked goods
Ube gets its purple colour from anthocyanins, natural pigments that can change depending on acidity. To keep the colour bright and vibrant, simply add a little acid to your recipe. Whisk in ½ tbsp of lemon juice or a pinch of cream of tartar per batch. This helps keep the batter a bright, true violet without affecting the taste.
Go easy on the baking soda
Too much baking soda can turn ube a dull grey-blue colour. If your recipe contains baking soda, balance it with a small amount of acid.
