Ingredients:
- 500 g Soezie All-In Wholegrain Bread Mix
- 500 g Soezie All-In White Bread Mix
- 320 ml water + 300 ml water
- Pumpkin seeds
- Sunflower seeds
- Poppy seeds
- Flour to work on
Necessities:
- Zenker Bread Roll Baking Pan Perforated 6 cavities and/or Zenker Mini Baguette Baking Pan Perforated 4 cavities
- LOYAL Elite Cooling Rack Quarter 30x22cm
Step 1: Prepare the dough
Prepare the whole wheat dough using 500 g of Soezie All-In Whole Wheat mix and 320 ml of water, following the instructions on the packaging. Then prepare the white dough using the Soezie All-In White mix and 300 ml of water, as indicated on the packaging.
Cover the dough with cling film or a clean, damp tea towel and leave it to rise in a warm place for 40 minutes. Alternatively, you can set your oven to 35–40°C and place the dough inside. This creates a similar environment to a proving cabinet.
Step 2: Shape the dough into rolls
After 40 minutes of rising, gently flatten the dough on a floured work surface and divide it into portions of approximately 120 g each.
Shape each portion into a small, round ball. To do this, cup your hands around and slightly underneath the dough ball, then gently pull the dough towards you to create a smooth, round shape.
Brush the tops of the dough balls with a little water. Place the seeds and grains in separate small bowls, then dip the moistened tops of the dough balls into them.
Place the dough balls in the Zenker baking tin and leave them to rise again in a warm place for another 40 minutes.
Step 3: Bake the bread rolls
Preheat the oven to 220°C (200°C for a fan oven). After the second rise, bake the rolls for approximately 18–22 minutes, until golden brown and cooked through. The rolls are ready when they sound hollow when tapped on the bottom.
Remove the rolls from the baking tin after baking and leave them to cool on a wire rack.
Tips & advice
Bake fresh bread rolls in no time
Baking your own bread rolls quickly and easily is simple with Soezie's ready-made bread mixes. In most cases, you only need to add water, saving you plenty of time and effort. This means you can enjoy delicious homemade bread even if you're short on time or have little baking experience!
How to bake the crunchiest bread rolls
For extra-crispy bread rolls, there are a few things to keep in mind. Using flour with a high protein content gives the dough strength and elasticity, helping to create a crispy crust. It's also important to let the rolls cool properly on a wire rack, as the crust develops its crispness as they cool.
