Looking for an easy Summerween treat? These cookies are quick to make and perfect for a Summerween party, Halloween party, or spooky dessert table.

Prepare

Ingredients

  • 500 g FunCakes Mix for Cookies
  • Wilton 4-in-1 Sprinkle Mix Spooky Halloween
  • Wilton 4-in-1 Sprinkle Mix Haunted Halloween
  • Jar of apricot jam
  • 150 g unsalted butter
  • 1 egg (approx. 50 g)

  • Wilton Koekjesuitsteker Pompoen 7,9cm
  • Wilton Koekjesuitsteker Vleermuis 7,8cm
  • Wilton Wide Glide Rolling Pin 50cm
  • Patisse Houten Kwastje 1,5cm
  • Sieve

 

Step 1: Make the cookie dough

Prepare the 500 g FunCakes Mix for Cookies as indicated on the package. Wrap the dough in plastic wrap and let it firm up in the refrigerator for 1 hour.

Step 2: Preheat the oven

Preheat the oven to 180°C (convection oven 160°C) and line a baking tray with baking paper.

Step 3: Bake the cookies

Briefly knead the chilled dough until smooth and roll it out on a lightly floured work surface to a thickness of approximately 2–3 mm. Cut out shapes and place them on the prepared baking tray. Bake the cookies for 9–12 minutes until lightly golden and cooked through. Leave them to cool completely on a flat surface.

Step 4: Make the apricot glaze

Heat the jar of apricot jam in the microwave and press it through a sieve using the back of a spoon. This will be your apricot glaze for brushing the cookies.

Step 5: Decorate the cookies

Brush the cookies with a thin layer of apricot glaze and sprinkle the sprinkle mix over the top.
