Preheat the oven to 175 °C (convection oven 160 °C). Make sure all ingredients are at room temperature. For a Ø20 cm cake, mix 250 g of mix, 230 g of eggs (4½ eggs) and 20 ml of water in a bowl. Beat for 8 to 10 minutes on high speed, then 2 to 3 minutes on low speed. Grease a baking tin and fill it halfway to two thirds full. Bake the sponge cake in the centre of the oven for 35 to 40 minutes. Do not open the oven during baking. The sponge cake is ready when it feels springy to the touch. Remove from the tin immediately and allow to cool on a wire rack.
