The FunCakes gluten free mixes are produced in a gluten free facility. FunCakes can guarantee that the mixes contain less than 20mg / 20ppm gluten per kg. Most people with coeliac disease or gluten sensitivity will not get any symptoms with this low quantity. Therefore anyone who follows a strict gluten free diet can enjoy the safe baking mixes from FunCakes.
For approximately 24-30 Madeleines, use 400 g mix, 4 eggs (200 g) and 190 g butter. Bring the eggs to room temperature and melt the butter. Combine the mix, eggs and melted butter in a bowl and gently fold with a spatula until smooth. Transfer the batter to a decorating bag and refrigerate both the filled bag and the Madeleine baking pan for 1.5-2 hours. Preheat the oven to 215°C (top and bottom heat) and grease the baking pan with Bake Release Spray. Make sure the pan is still cold before piping the batter into the moulds, filling each approximately 2/3 full (about 25 g per Madeleine). Bake for 8-10 minutes, checking carefully from 8 minutes onwards to prevent overbaking.
