Cookies for Kika with Alphabet Sprinkles

Prepare
Ingredients:
- 500 g (4 1/4 cups) FunCakes Cookie Mix
- FunCakes Sprinkle Medley Alphabet
- 1 egg
- 150 g (2/3 cup) soft unsalted butter
- Apricot jam
- Flour for rolling

Step 1: Make the cookie dough
Prepare 500 g (4 1/4 cups) of FunCakes Cookie Mix as instructed on the packaging. Wrap the dough in plastic wrap and let it chill in the fridge for one hour.
Step 2: Bake the cookies
Preheat the oven to 180°C / 355°F (160°C / 320°F for fan ovens). Knead the dough from the fridge until smooth and roll it out to a thickness of about 2 to 3 mm on a floured surface. Cut out the letters and place them on a baking sheet lined with parchment paper. Bake the cookies for about 9-12 minutes, or until light brown and cooked through. Let them cool flat on the countertop.
Step 3: Make the apricot jelly
Heat the apricot jam in the microwave and push it through a sieve using the back of a spoon. This creates an apricot jelly.
Step 4: Decorate the cookies
Spread a thin layer of jelly on the cookies, then stick the FunCakes Sprinkle Medley Alphabet onto them.
