For the best results, the following process is recommended:

• For covering cakes: allow the sugar paste to come to room temperature. Knead the sugar paste well until it becomes soft and pliable. Lightly dust the work surface with corn starch and roll out the sugar paste with a rolling pin into an even sheet of at least 4 mm thick. Turn the sugar paste a quarter turn regularly to prevent sticking. Make sure the sheet is the correct size to cover the cake.
• For decorations and drapes: allow the sugar paste to come to room temperature. Knead the sugar paste well until it becomes soft and pliable. Lightly dust the work surface with corn starch and roll out the sugar paste with a rolling pin into an even sheet of 2 mm thick. Turn the sugar paste a quarter turn regularly to prevent sticking. The sugar paste is then ready for creating drapes and decorations.
• For colouring: after adding colour, let the sugar paste rest for one hour, well covered, for the best results. Knead the sugar paste again before further use.
