Pectin is a natural, plant-based gelling agent and an excellent alternative to gelatine. It is ideal for giving your bakes, desserts and preserves a firm and jelly-like texture.
Thanks to its versatility, pectin is indispensable in the kitchen for preparing jams, jellies and fruity fillings. It not only provides the perfect texture but also helps recipes hold their shape.

Use half a teaspoon of pectin as a replacement for about four gelatine sheets. Mix pectin with a small amount of sugar before adding it to your recipe. Briefly boil it in water or fruit juice and let it simmer for 1 more minute. Allow to cool to room temperature and set in the fridge.
For jams and marmalades: use about 3–8 g pectin per 1 kg of fruit and sugar. For strong gelation in jellies: use 14–18 g pectin per 1 kg. The less natural pectin the fruit contains, the more should be added. Stir continuously for the best result.
