The perfect Macaron
The biscuits or shells of macrons should be crisp on the outside but soft on the inside. It is important that the shells have a 'foot', without it it's not a real macaron. The foot of a macaron is at the bottom of the biscuit/shell. While resting, a skin forms on the puffed-up macarons, which helps to push the macaron up during baking. This creates a foot.
The Taste
The flavour of macarons comes mainly from the filling between the shells. The shells themselves have an almond-like nutty flavour with a hint of sweetness. The combinations you can make with macarons is endless! For instance, you can make fresh macarons with green apple, or with a fuller flavour such as caramel macarons.
Texture
Macarons have a specific texture and appearance. The outside of the shell should have a smooth top with no bumps, cracks or rough edges. In addition, the outside of the shell should be crisp and not hard. The macaron should not be moist, but not dry either.
